Skillet Sausage and Potatoes

Ingredients

4 tablespoons olive oil
1 3/4 pounds unpeeled red-skinned potatoes -- cubed
2 medium onions -- thinly sliced
1/2 pound cooked smoked turkey sausage -- 1/4-inch thick
1 teaspoon dried thyme -- crushed
1 1/2 teaspoons cumin seed -- crushed
1/4 teaspoon salt
1/4 teaspoon pepper

Instructions

Pour 4 tablespoons oil into a 12-inch skillet. Cook potatoes and onion,
uncovered, in hot oil over medium-high heat about 12 minutes or til
potatoes are nearly tender, stirring occassionally.
Add sausage and 1 tablespoon oil, if necessary, to prevent sticking. Cook,
uncovered, about 10 minutes or til potatoes and onions are tender and
slightly brown, stirring often.
Stir in thyme, cumin seed, salt and pepper; cook and stir for 1 minute
more.
